Raw Mini Mooncakes

Ingredients:
Crust:
1/2 cup raw oat powder
1/2 organic cashews
1 TBS coconut oil
1 tsp coconut sugar

Filling:
1.5 cup cashews (soaked for 1 hour)
1/4 cup water
1/2 cup coconut butter
1/8 tsp himalayan salt
6 drops vanilla essence

Method:
1. Put all crust ingredients in a food processor till they start to stick together.
2. Blend all filling ingredients in a high speed blender till smooth.
3. Press the crust mixture to form a thin outer layer at the bottom of the mold.
4. Fill the mould with the filling mixture.
5. Put in freezer at least 2 hours till harden up.

For choice of different colors and tastes, you can blend with:
- chocolate: raw cacao powder
- orange: goji berries
- green: spirulina powder
- purple: raspberries

生機冰皮一口月餅

材料:
餅皮:
1/2杯 生燕麥粉
1/2杯 有機腰果
1湯匙 椰子油
1茶匙 椰糖

餡料:
1.5杯 腰果(預先浸泡1小時)
1/4杯 清水
1/2杯 椰子醬
1/8茶匙 喜馬拉雅山岩鹽
6滴 雲尼拿精華

做法:
1. 把所有餅皮材料放入食物處理器攪拌至粘合在一起。
2. 把所有餡料材料放入高速攪拌機攪拌至幼滑。
3. 把餅皮混合料在模具裡壓成薄層。
4. 加入餡料混合料
5. 放入冰箱冷藏最少2個小時至硬身。

要做不同顏色和味道,可加入以下材料跟餡料一起攪拌:
- 巧克力:生可可粉
- 橙色:枸杞
- 綠色:螺旋藻粉
- 紫色:紅桑梅
